Title: Thai Pork Dumpling Soup

1ozCellophane noodles or bean threads
1/4lbFresh black fungus (wood ear) mushrooms
  (or 2 oz dried wood ear mushrooms)
10ozGround pork
  (or substitute chicken, turkey or shrimp)
1tbFish sauce
1tsPureed garlic
1tbCornstarch
10cChicken stock or canned broth
  Freshly ground black pepper -- to taste
  Fish sauce; to taste
1bnScallions, white and green parts -- thinly sliced
1/2bnCilantro; leaves only
  === cilantro paste ===
1/2bnFresh cilantro; stems removed
1/2tbPalm sugar or brown sugar
1/2tbFreshly-grated ginger
1tsCracked black pepper
1tsPureed garlic
1tbFish sauce
